Cherries and chocolate are one of the great flavor combinations in fruit. These cherries are also delicious warm under ribbons of Warm White Chocolate Sauce.
Remove the stems from:
2 pounds fat, ripe, sweet cherries
Arrange the cherries in a single layer in a large nonstick skillet. Sprinkle evenly with:
1/4 cup sugar
Over high heat, shake the skillet and turn the cherries until the sugar melts and the cherries are heated through, about 5 minutes. Remove from the heat and sprinkle over:
1 tablespoon crème de cacao or maraschino liqueur or kirsch
Shake the pan over high heat for a few seconds until you can smell the spirits. Remove the cherries and juices to a serving bowl. Let cool, then remove the pits from the cherries with your fingers, cover, and refrigerate for 1 to 2 hours.
Meanwhile, prepare Sour Cream Whipped Topping or Whipped Cream.
Cover and refrigerate. To serve, divide the cherries and their liquid among 6 shallow dessert bowls. Put a dollop of whipped cream on top of each bowl. Dividing evenly, sprinkle with:
